El Fayoum is a depression in the desert. The wooden water wheels made the most mournful sound as they slowly turned. That was followed by a lunch of Koshary or Koshari. However you choose to spell it, Koshary is very yummy, traditional dish, served all over Egypt. A gigantic plate of lentils, noodles, onions and other condiments that could have easily been split by two people.'
