'#Fattah #Egyptian  #الفتة_المصري  Disclaimer:  I was filming this during quarantine and couldn\'t go to the grocery store to get the right type of meat for the Fattah. usually I like using Chuck roast or beef shank. but since I couldn\'t go anywhere I worked with the meat I got.   English Video:  https://youtu.be/JpeLgXjZl7U  Egyptian Fattah is a layered dish consisting from crispy bread, rice, meat and garlic and Vinegar sauce.   Start by cooking your meat and making your stock.  cube the meat and sauté in Ghee with one whole onion. when it caramelizes add your water to cover the meat. here I used the pressure cooker that\'s why I transferred everything in it. if you will be making the stock in a regular pot then skip this part but you can discard the extra fat before adding your water.  I added 2 cubes of vegetable bullion (which is optional and you can omit it if you want)  season with salt and black pepper to taste. then leave it to boil for 5 minutes then skim all the gunk that rise to the surface then leave to cook until the meat is soft.  when it\'s done fish out the meat and set aside for later.   2nd we prepare the rice. sauté the vermicelli pasta in some ghee until golden brown, then add the rice.  quantities will differ depending on how many people you are cooking for but a general rule of thumb for Egyptian rice  every cup of short grain rice you add one and a 1/4 cups of water and for each cup pf vermicelli pasta you add an additional cup of water.  season with salt and black pepper, then once it boils, leave on the lowest heat setting to fully cook (the amount of time will depend on how many cups of rice you are making)  once fully cooked fluff the rice with a fork and set aside for later.   3rd step is to prepare the Garlic Sauce.  there are 2 types of Garlic sauce.  the Garlic and vinegar sauce:  sauté a lot of crushed garlic in some ghee then once it turns yellowish color add vinegar to it. then add couple of ladles of the beef stock we made earlier and season with salt and black pepper.  leave it to boil then it\'s ready. set it aside.  2nd type of the sauce s the red garlic and vinegar sauce.  it starts like the first sauce. sauté a lot of garlic until it reaches the yellowish color then add vinegar and then add the tomatoes sauce (you can use fresh tomatoes juice if you want, but you will need to leave it longer to cook)  season with salt and black pepper then leave on low heat for 15-20 minutes.   4th step is to prepare the Crispy bread.  I like using Pita bread cut into small cubes. and fry it in a mixture of oil and ghee. until it becomes crispy and golden brown. fish them out and set aside.   now assembly:   I\'m making a small portion here but usually this is a type of food that we share around feasts and big events so usually we make it in big Quarantine.  Start with a layer of your crispy bread then add some of the beef stock. make sure all the bread is well coated then add a layer of the rice. some people like to mix everything together before presenting it but I prefer to keep it this way and my guests can choose which sauce they like and they can mix it themselves.  Now is a good time to fry the meat in some ghee. as I said due to quarantine I was not able to get the type of meat I usually make it with.  you can add the sauce on top or just the meat and serve it to your guests then they would add the garlic sauce of their choice.
