'5 Make-Ahead Breakfast Bowls Mon-Fri

Let me know what you think and if you give them a try! xoxo SUBSCRIBE: https://www.youtube.com/user/honeysucklecatering?sub_confirmation=1  Each Recipe makes 3 servings and can last a few days in the refrigerator  MONDAY - Skillet Sausage & Eggs with Roasted Potatoes - 5-6 red potatoes, diced - 1 green bell pepper, diced - 1/2 yellow onion, diced - 2 tbsp olive oil - 1 tsp kosher salt - cracked black pepper - 6 eggs - 1/2 lb pork sausage - cheddar cheese - salsa - sliced green onions  In a large bowl add the diced potatoes, green bell peppers, and onions along with olive oil, salt, and pepper. Mix until everything is coated evenly. Pour out onto a baking sheet lined with parchment paper and roast at 450ºF for 35-40 minutes, taking it out halfway through to mix.  In a heavy-bottomed skillet cook the sausage until well done, then add 6 whisked eggs and cook until fluffy.   Serve in a bowl with shredded cheddar cheese, salsa, and sliced green onions.  TUESDAY - Sweet Potato, Kale, Black Bean Hash with Egg - 1/2 yellow onion, diced - 1 sweet potato, diced - chopped dino kale (4 leaves) - 1 tbsp olive oil - 1/4 chicken broth - 1 cup black beans - 2 tsp chili powder - 1/2 tsp cumin - 1/4 tsp smoked paprika - 1/4 tsp garlic powder - 1 tsp kosher salt - 1/4 chicken broth - 1 fried egg - sriracha  In a heavy-bottomed pan heat the olive oil and add the onions and saute for 2 min until fragrant. Add sweet potatoes and 1/4 chicken broth and let cook 10 minutes, stirring occasionally. Add Kale, black beans, and the spices along with the rest of the chicken broth. Cook down until the potatoes are tender and crispy (5 min).   Serve in a bowl with a fried egg and Sriracha.  WEDNESDAY (Humpday) - Chia Seed Pudding with Banana & Coconut - 1 overripe banana - 2 tbsp maple syrup - 1/2 tsp vanilla - 1/2 cup chia seeds - 2 cups coconut milk - fresh strawberries - fresh blueberries - coconut chips - sliced almonds  In a large bowl mash the banana then add the maple syrup and vanilla. Mix again the add the chia seeds, mix, then stir in the coconut milk while mixing. Portion out into bowls or tupperware and chill 4 hours-overnight. Top with fresh berries and coconut flakes, almonds.  THURSDAY - Savory Bacon, Eggs & Cheese Oatmeal - 2 strips sliced bacon - 1 tbsp bacon fat - 1/4 cup diced onions - 1/2 cup rolled oats - 3/4 cup water - 3/4 cup milk - 1/4 cup shredded cheddar cheese - more cheese - fried egg - sliced green onions  In a pan cook the bacon until crispy, saving 1 tbsp of the rendered fat. Then in the same pan cook the diced onions until fragrant, about 2 min. Add the oatmeal, water, and milk. Cook on med-low for 10 min until the liquid is completely absorbed. Add the 1/4 cup cheese and mix in. Top with the egg, more cheese, and green onions.  FRIDAY - Raspberry Cheesecake Overnight Oats - 1/2 cup fresh, chopped raspberries - 2 tbsp cream cheese, room temp - 1/2 cup plain greek yogurt - 2 tbsp maple syrup - 1/2 tsp vanilla - 1/2 cup milk - 1/2 cup rolled oats - 1 tbsp flax seed meal - roasted pistachios - fresh raspberries - lemon zest  In a bowl mix the cream cheese, greek yogurt, maple syrup, and vanilla. While still mixing, incorporate the milk, rolled oats, flax seed meal, and chopped raspberries. Portion out into containers and chill overnight. Serve with pistachios, fresh raspberries, and lemon zest. Enjoy!!!
