I promise this bread will not cut the roof of your mouth like a typical banh mi usually does for me. Lol! I’ll spread it with some mayo and then for the protein, I found this five-spice baked tofu that works sooo well for our intended purpose. Even if you’re a meat lover, you will enjoy it. I promise! If not, just sub for some grilled pork or chicken. I have a recipe for these and will leave in the end card for you! Now I’ll layer it with some pickled daikon and carrots, some shredded cucumbers, cilantro, and a few slices of jalapeno for a spicy kick. Slice it up and I’ll place it into my square Monbento.   The monbento square is the big box bento that’s for big appetites. It’s perfect for big salads, sandwiches, and generous meals! I’ve layered the bottom with some lettuce to make it beautiful, we’ll place our sandwich in and then I’ll fill in the gaps with some gorgeous tomatoes.  For the bottom square, We’ll make this our snack/dessert compartment. In the little compartment here, I’m going to add some greek yogurt. Add some chia, hemp seeds, matcha, and a drizzle of honey on top. On the side, so that I could dip or accompany the yogurt, we’ll do a rainbow fruit salad! We’ll start with some strawberries, some mango chunks, oranges, some kiwi slices, blueberries, and here are some muscat grapes that are back in season! How gorgeous is this?! I could eat the fruit with the yogurt or alone later for a snack! Now you might be wondering how everything is going to stay in place - the Monbento square and the Monbento original boxes come with an internal lid fitted with a silicon hinge, it’s completely airtight to keep your food fresh. For this, I’m going to be using the Monbento Element, The insulated lunch box that can keep your lunch either hot or cold for up to 5 hours. This lunch is perfect for students or working professionals without access to a microwave at lunch. This would have been perfect for my dad - he was a mailman and always loved bringing rice but he would always eat it cold because he was out delivering. I thought I’d make one of his favorite meals - curry. I’m adding some hot basmati rice, and some butter chicken (I have a recipe video for this and will leave a link at the end card for you!) then for some fresh flare - I’ll add some diced tomatoes and cucumbers that will help cool down the palette, some chickpeas, and sauteed zucchinis. This is a pretty complete and filling meal! For those of you having lunch on the run, it’s the perfect way to stay satiated with protein, veggies, and healthy carbs.   We’ll add some garlic noodles - *recipe alert* and some soy glazed salmon. I also have the Monbento Element container here that will allow me to add any extra sauces. I like a bit of spiciness to the noodles, so I’m adding some of my leftover soy glaze, along with a hint of sriracha to this.  Cover it up and tuck it in. Nice and snug. And then for the bottom layer, you don’t think we’re just gonna have carbs and protein did you? We’re going to add our veggies. I have some steamed broccoli, cauliflower, carrots, and asparagus that I’ll arrange in here - add some toasted sesame oil, a hint of salt, and some toasted sesame seeds, and we’re good to go. Seal it up and then there’s even a compartment for my cutlery! This is the Monbento Pocket that fits snuggly in between the top lid and our internal lid. I love the design - it’s so sleek.
