'SMOKED FISH PANCAKES COOKED BY FILIPINO NANAYS OVER BAMBOO!?    What an amazing find this was in Catalaban Island, Eastern Samar.  The locals on this island catch tuna from the surrounding ocean and then turn them into the most unique food... PANCAKES!  Yes, they make 100% Smoked fish pancakes.  It was so much fun learning about this and interacting with the two local Nanay\'s who were cooking.    The recipe may be simple, but the way they are cooked is very local and very unique.  Not to mention I have never seen fish pancakes before!?
