'Typical Egyptian Foods IV: *Dukkah,Feta Cheese, Basbousa & Halawa*  DUKKAH:is an Egyptian spice blend of toasted nuts (usually Hazelnuts) and seeds, has become a international favorite over the past few years, thanks to its popularity first in Australian restaurants and then among home cooks and food blogs. The warm, aromatic mixture is addictive when served as a dip with bread and olive oil. We\'ve also been sprinkling it on everything else lately  roasted vegetables, pasta, feta cheese, and even peaches. Dukkah (DOO-kah) may be purchased in some gourmet and ethnic markets, but it\'s easy to make at home. Freshly toasted nuts and seeds also taste better, and it can be fun to experiment with different ingredients. FETA CHEESE (Cheese: -Gebna- and Feta,means \"slice\")  is a brined curd cheese traditional originally from Greece.but is also made in Egypt  with excellent quality, and is very popular. Feta is a crumbly aged cheese, commonly produced in blocks, and has a slightly grainy texture. It is used as a table cheese, as well as in salads pastries and in baking, or served with some olive oil or olives and sprinkled with aromatic herbs such as oregano. It can also be served cooked or grilled, in sandwichs, in omelettes, to make gebna makleyah or as a salty alternative to other cheeses in a variety of dishes. BASBOUSA (Dessert);Basbousa is a sweet cake made of  semolina soaked in syrup. It is found in the cuisines of the eastern Mediterranean under a variety of names.and is one of the most popular desserts of Egypt. Basbousa is routinely called \"Hareesa\" in otherArabic countries.usually is coated with almonds and cut in portions. HALAWA (Tahinia)-or Halwa or Halva- (Dessert): - Probably originally turkish,although today is consumed throughout Middle East -This is MY FAVORITE sweet  of Egypt really i have not words to describe the taste of this typical tibdit / dessert . Halawa means \"sweetness\" in Arabic and is made from tahina, (sesame seed paste, and sugar). It is usually made in blocks. ,There are many varieties available  mixed with chocolate, almonds, hazelnuts,pistachios etc'
